Chicken and squid salad

Ingredients: 300 grams of chicken fillet, the same amount of Chinese cabbage, one medium-sized bell pepper, two tomatoes, three small pieces of squid, yogurt or sour cream, one apple, lemon juice, salt to taste.

Recipe: Peel the squid, boil in salted water and cut into strips. Boil the fillet in the same way, but cut it into small cubes. We also cut tomatoes, peppers and apples into cubes and sprinkle with lemon juice. Wash and dry the Chinese cabbage and cut it thinly. Mix all the ingredients, add salt to taste and add sour cream or yogurt. Salad ready.

Avocado and chicken salad

Ingredients: 100 grams of fillet in any form (boiled or baked), one fresh cucumber, 1 avocado, 1 apple, 3-4 tbsp. yogurt, 2 tbsp. olive oil, 1 tbsp. lemon juice and 100 grams of spinach.

Recipe: Separate chicken fillet from bones and skin, cut into pieces. Peel the avocado, apple and cucumber. Next, cut the avocado and cucumber into small slices, but it’s better to grate the apple - the salad will be better saturated with juice. At the end of cooking, stir and season with yogurt.

Hawaiian chicken salad

Ingredients: 600 grams of fillet, 250 grams of ham, the same amount of pineapple (it doesn’t matter whether fresh or canned), three stalks of fresh celery, 100 grams of cashew or macadamia nuts (a little exotic), 150 ml of mayonnaise, 60 ml of pineapple juice (you can take syrup if canned pineapple), green onions, 2 tsp. vinegar and 3 tbsp. honey, salt and pepper to taste.

Recipe: Finely chop the boiled chicken fillet, ham and pineapple into cubes. Wash the celery and chop into slices. Also chop the green onions and nuts, mix all the ingredients. For dressing, take mayonnaise, pineapple juice (syrup), honey, vinegar, mix in a separate container and add to the salad. Mix carefully again.

Salad with chicken, champignons and celery

Ingredients: 2 stalks of fresh celery, 200 grams of boiled chicken fillet, 200 grams of medium champignons, 2 pickled cucumbers, 50 grams of mayonnaise, a tablespoon of mustard, pepper and salt.

Recipe: Traditionally, cut the chicken into cubes and cut the celery into thin strips. Cut the cucumbers into cubes and the champignons into pieces. Fry the mushrooms in oil and mix with the rest of the ingredients. Salt and pepper. For dressing, take mayonnaise, after mixing it with mustard. At the end, decorate with a sprig of greenery.

Hearty salad with chicken and red beans

Ingredients: 300 grams of chicken fillet, 2 pickled cucumbers, 2 boiled potatoes, 3 hard-boiled eggs, 1 onion, 0.5 cans of canned beans, 50 grams of mayonnaise, herbs (parsley), pepper and salt.

Recipe: Cut the meat, eggs, cucumbers and potatoes into cubes, and the onion into half rings. Drain the brine from the beans and mix all the ingredients, season with mayonnaise. Place in portions and garnish with parsley.

Chicken and orange salad

Ingredients: 200 grams of boiled chicken breast, 1 fresh cucumber, 1 bunch of lettuce, 1 orange, green onion, 2 tbsp. sesame seeds, 3 tbsp. olive oil, garlic clove, 1 tbsp. l. soy sauce, 1 tsp. mustard (preferably Dijon), 1 tbsp. l. lemon juice, salt and pepper to taste.

Recipe: Cut the chicken and cucumber into cubes, peel the orange, remove the film and cut into pieces. Chop the green onions, rinse the salad and tear into pieces. For dressing, mix olive oil with soy sauce, lemon juice, mustard and garlic squeezed through a press. Season all ingredients with this sauce and mix well. At the end of cooking, add sesame seeds, previously fried in a frying pan.

Chicken and cauliflower salad

Ingredients: 300 grams of boiled fillet, 5 cherry tomatoes, 100 grams of Parmesan cheese, 200 grams of cauliflower, 1 clove of garlic, 50 grams of sour cream and the same amount of mayonnaise, salt and pepper.

Recipe: Cut the fillet into small cubes, cut the tomatoes (since they are already small) into 2 parts. Grate the hard cheese on a grater (large), separate the cauliflower into inflorescences, after boiling them in salted water for 10-15 minutes. Pass the garlic through a press, and mix the mayonnaise with sour cream. Mix all ingredients, season with our dressing and add salt/pepper before serving.

Layered salad with chicken and mushrooms

Ingredients: 300 grams of boiled chicken, 2 boiled eggs, 200 grams of champignons and the same amount of hard cheese, onions, 3 tablespoons of olive oil, 200 grams of mayonnaise.

Recipe: Grate the eggs on a coarse grater and cut the meat into cubes. Wash the champignons, dry and cut into pieces. Also grate the cheese on a coarse grater. Chop the onion and fry with mushrooms until half cooked. Lay out the layers in the following order: chicken (bottom), eggs, mushrooms and onions, cheese (top), coating each layer with mayonnaise. Top with grated egg and onion.

Salad with chicken and tomatoes

Ingredients: 400 grams of boiled fillet, 4 large red tomatoes, 1 large stalk of celery, 100 grams of lettuce, 1 tbsp. low-fat mayonnaise and the same amount of yogurt, a small red onion.

Recipe: Cut the tomatoes into 8 slices, but do not cut all the way through (this is important!). Traditionally, cut the fillet into cubes and mix with finely chopped onion and celery. Add yogurt with mayonnaise, salt and mix thoroughly. Divide the chopped lettuce into 4 salad bowls, placing an open tomato in each, and lettuce on top of it.

Salad with grapefruit and chicken

Ingredients: 150 grams of boiled chicken breast, 100 grams of good prunes, one large ripe grapefruit, pine nuts (1-2 teaspoons), mayonnaise and salt.

Recipe: Cut the chicken meat into small pieces. Rinse the prunes well in water, pour boiling water over them and leave to steam for 15 minutes. Then cut into large pieces. Wash the grapefruit and cut into cubes, mix with the rest of the ingredients. Season with mayonnaise, salt and sprinkle with pine nuts.

Chicken salad with croutons

Ingredients: 100 grams of chicken fillet (fried), 1 cucumber, 200 grams of crab meat, half a can of canned peas, 200 grams of champignons, 2 tbsp. vegetable oil, 100 grams of mayonnaise, 1 slice of bread (preferably black), salt, herbs.

Recipe: Cut the fillet fried in a frying pan into pieces. Chop and fry the mushrooms in the same way. Fry cubes of black bread in the oven, cut crab meat and cucumber into strips. Mix all ingredients, add peas (without brine) and season with mayonnaise, mixing well again.

Chicken and pasta salad

Ingredients: 3 cups of boiled vegetables (any), 300 grams of boiled chicken, 200 grams of cheese, 500 grams of pasta, 1 tbsp. vegetable oil, 2 stalks of celery. For the sauce, ½ cup vegetable oil, 3-4 tablespoons tarragon vinegar, half a teaspoon of sugar, the same amount of dried marjoram, ¼ teaspoon mustard, 1-2 shallots, parsley.

Recipe: First, boil the pasta in a saucepan, adding salt and oil to taste. Ready
Drain the pasta in a colander, transfer to a large salad bowl and mix with cubes of cheese, pieces of chicken, vegetables and slices of fresh celery. Mix the ingredients for the sauce in one bowl and pour the sauce over the pasta. It is recommended to cool the salad well before serving.

Salad with rice and chicken in Indonesian style

Ingredients: 300-400 grams of fried chicken breast, 300 grams of boiled rice, red and green peppers - 1 each, 100 grams of mayonnaise, 150 grams of yogurt, 2 tbsp. ketchup, 1 tsp. ginger, 1 sprig of parsley, salt and ground black pepper.

Recipe: Cut the sweet pepper into strips and simmer in vegetable oil. Cut the fillet into cubes and mix with rice and sweet pepper. Prepare a sauce of yogurt, mayonnaise, ketchup, salt, pepper and ginger, and season the salad. Before serving, season with parsley.

Salad with chicken breast and eggplant

Ingredients: 200 grams of eggplants, 100 grams of fried chicken breast, 50 grams of boiled potatoes and the same amount of carrots, vegetable oil for frying, 1 cucumber, basil and parsley. For dressing, take sour cream, horseradish, mustard and lemon juice.

Recipe: Cut the eggplants into small slices and simmer with basil in oil. Cut the boiled vegetables into slices, chop the greens, and chop the meat and potatoes into cubes. Mix with dressing and garnish with herbs before serving.

Chicken and strawberry salad

Ingredients: 300 grams of chicken fillet, fried in a frying pan, 200 grams of fresh strawberries, 100 grams of canned soy sprouts, 2 tbsp. vegetable oil. For dressing, take 1 tbsp. 3% vinegar, the same amount of soy sauce, 2 tbsp. olive oil, 1 tsp. ground ginger, ground white pepper.

Recipe: Cut strawberries in half and mix with fillet, ginger, and soy sprouts. Pour in the sauce, stir and garnish with herbs before serving.

Chicken salad with white wine

Ingredients: 200 grams of boiled chicken, 2 pickled cucumbers, 100 grams of champignons, 2 tbsp. olive oil, 100 grams of dry white wine, freshly ground black pepper, salt and parsley.

Recipe: Boil and cut the champignons into cubes. Grind the cucumbers and boiled fillet in the same way. Mix everything, add salt and pepper to taste, season with wine, after mixing it with olive oil. Before serving, be sure to sprinkle with chopped parsley.

Salad with chicken and green radish

Ingredients: 300 grams of boiled chicken fillet, 100 grams of green radish, mayonnaise and salt.

Recipe: Finely chop the chicken and place on a wide plate. Place green radish in the second layer, add salt, and pour mayonnaise on top. Delicious!

Classic salad with chicken and grapes

Ingredients: 500 grams of chicken breast, boiled and then fried with curry, 50-60 grams of ground almonds, 200 grams of cheese, 4 boiled eggs, 200 grams of mayonnaise and 100 grams of grapes.

Recipe: Sequentially place chopped chicken breast, grated cheese, and chopped eggs into a salad bowl. Sprinkle each layer with almonds and season with mayonnaise. Garnish with grapes, cut in half (they are laid on top tightly to each other).

Hot salad with chicken, lentils and broccoli

Ingredients: 125 grams lentils, 225 grams broccoli, 350 grams smoked chicken breasts, 1 clove garlic, 1 teaspoon English mustard powder, 2 tbsp. balsamic vinegar, 4 tbsp. olive oil, 1 onion.

Recipe: Boil the lentils and broccoli, cut the cabbage into small pieces. In another bowl, mix the crushed garlic clove with salt, mustard, vinegar and olive oil. Chop the onion and fry in oil for 5 minutes. Add chicken and broccoli here and simmer for 2-3 minutes. At the end of cooking, mix with lentils and add dressing.

Salad with homemade chicken and raspberries

Ingredients: 300 grams of chicken pulp, 200 grams of sweet pepper, 3 boiled eggs, ½ cup of raspberries, 1 cup of mayonnaise, salt.

Recipe: Grind the boiled poultry pulp and combine with the pepper, cut into strips. Add eggs cut into 4 pieces. Season with mayonnaise, lightly salt and add berries.

It is worth noting that any chicken salad is not necessarily a holiday dish, as many housewives believe. Most of these salads are prepared within 30-40 minutes, so you can pamper your family, who have just returned home on a regular working day, and unexpected guests who are visiting for the holiday with a delicious recipe.

Boiled chicken is a unique ingredient. It goes perfectly with other types of meat, vegetables, mushrooms, fruits and dried fruits, nuts, cheese, as well as with most dressings and sauces. Dietary white meat will appeal to any gourmet, and is also ideal for people watching their figure. To prepare a satisfying, tasty and low-calorie dish, you don’t have to have outstanding culinary talent or spend several hours on complex recipes: just cut up the boiled breast, mix it with fresh vegetables, herbs and season with olive or other vegetable oil.

Despite the fact that most often preparing salads traditionally involves the use of boiled fillet, you can also diversify the usual dish by frying fillet pieces in a frying pan or baking them in the oven. Warm chicken salads, which are relevant at any time of the year and can replace a full meal, will also make the daily menu sound new.

One late evening in 1937, the owner of the Brown Derby restaurant (Los Angeles), Robert Cobb, prepared a salad for Sid Grauman, the owner of one of the theaters. He took a few ingredients out of the refrigerator and chopped everything finely. Thus Cobb salad was born. Since then, Grauman ordered only this salad; the salad's popularity increased, and Robert Cobb added it to the restaurant's menu. Variations of this salad are on the menus of restaurants all over the world. The main ingredients of the salad are lettuce, tomatoes, bacon, chicken/turkey, egg, avocado and blue cheese. Salad with dried apricots "South Hill"

I prepared this salad the other day as part of the “Revive Old Recipes” campaign on one of the sites. The salad is very satisfying, with a spicy, sweet and sour note from dried apricots. More suitable for diversifying the winter menu.

Ingredients:

  • Boiled chicken fillet - 1/2 piece (80 grams).
  • Dried apricots - 50 grams.
  • Medium carrots - 1 pc.
  • Boiled eggs - 2 pcs.
  • Walnuts - 50 grams.
  • Greens (I used cilantro).
  • Mayonnaise.
  • Lemon juice to taste.

Preparation:
Finely chop chicken fillet, dried apricots, and carrots.
Chop the nuts with a knife.
Grate the eggs on a coarse grater.
Chop the greens.
Place in layers in a salad bowl: chicken fillet, carrots, eggs, dried apricots, walnuts.

Salad with kumquat, arugula and chicken breast

Ingredients for two servings:

  • arugula - 40-50 g,
  • kumquat - 4 pcs.,
  • chicken/turkey fillet - 1 pc. (1/2 part of the breast),
  • orange - 1/2 pcs.,
  • Dijon mustard - 1 tsp,
  • light balsamic vinegar - 1 tsp,
  • olive oil - 1 tbsp. l.,
  • sugar - 1/2 tsp,
  • coarse salt to taste,
  • pepper to taste,
  • oil for frying.

Preparation:
Salt and season the chicken/turkey fillet just before frying. Fry on both sides in a heated frying pan with oil. Fry at high temperature, then remove from the stove, cover with a lid and allow to cool so that the meat remains juicy.
Then cut the meat into small thin pieces.
Cut the kumquats into circles, removing the seeds.
Wash the arugula.
Sauce: squeeze the juice from half an orange, add sugar, balsam, mustard and butter. Close the jar of sauce and shake well.
In a bowl, mix arugula, kumquat and fillet pieces, pour over the sauce, add salt and pepper.

Crow's Nest Salad

  • 3 boiled potatoes,
  • 1 large onion,
  • 3 hard-boiled eggs,
  • 500 g boiled chicken meat,
  • 100 g fresh (fried) or pickled mushrooms,
  • mayonnaise,
  • 1-2 tbsp. l. vinegar 6%,
  • 2-3 tbsp. l. vegetable oil,
  • salt and pepper to taste.

Potatoes - into large strips, fry in vegetable oil until tender (you can immediately fry raw until ready, you can cut boiled potatoes into cubes and fry, but boiled ones will crumble). Peel the onion, cut into half rings (thickness - as you like) or quarter rings, marinate in salted vinegar (add a little sugar) for 1-2 hours. Cut the boiled meat into strips. Cut the white into thick strips, and grind the yolk with salt, mayonnaise and finely chopped parsley. Divide into 6-7 equal parts and cut into small balls, giving them an oval shape. Place a layer of potatoes on a large flat dish, onions on it, then meat, mushrooms and proteins. Pour mayonnaise over the surface, sprinkle with herbs, berries, and add eggs. I water the surface with a chaotic “trickle” to create the appearance of anarchy and do not put too much mayonnaise. I don’t have enough yolks for the “testicles”, I also grate some processed cheese for the mass. All the components, as befits the nest of a decent crow, are laid out very sloppily so that the “tree-sticks” stick out.

Hawaiian salad

I took the recipe for the “Yummy” salad and upgraded it a little

  • 500 g chicken fillet,
  • 2 eggs,
  • 2 tbsp. l. starch,
  • 2 tbsp mayonnaise,
  • 200 g canned pineapples,
  • salt, pepper to taste.

Boil the fillet and cut into strips. Prepare an omelette from two eggs, starch and mayonnaise. Cool and cut into strips. Cut the pineapples into cubes. Mix everything and season with mayonnaise and spices.

Salad "Koyash"

  • 300 g chicken,
  • 3 pickled cucumbers,
  • 150 g cheese,
  • 2 onions (I fried)
  • 150 g corn,
  • 150 g Korean carrots,
  • 50 g raisins (or walnuts),
  • a pack of crackers,
  • mayonnaise, salt, spices. And for decorating pancakes.

Salad "Colored"

Recipe:

  • 2 onions,
  • 1 carrot,
  • 100 g boneless raisins,
  • 100 g cheese,
  • 1/2 can of canned food corn,
  • 2 medium cans cucumber,
  • 300 g chicken fillet,
  • 1 bag of crackers,
  • mayonnaise,
  • salt, pepper to taste.

Peel the onion, chop finely and saute for growing. oil, sauté grated carrots separately.
Wash the raisins and soak for 10 minutes. in boiling water, grate the cheese on a coarse grater, cut the cucumbers into cubes, cut the turkey into cubes and fry in vegetable oil.
On a large platter we place in piles next to each other: corn, raisins, turkey, croutons, carrots, onions, cucumbers.
A little mayonnaise for each slide. Mix everything before serving.

Salad of Chinese cabbage and boiled chicken meat

  • Chinese cabbage - half a head,
  • 2 cucumbers,
  • 1 medium onion,
  • parsley,
  • peeled sunflower seeds - 3 tbsp. l.,
  • boiled chicken meat (I used fillet from thighs and legs, of course, you can also use breast, but I didn’t want to),
  • white wine vinegar - 1-2 tbsp. spoons,
  • olive oil,
  • lemon juice - a little
  • salt, pepper to taste.

Chop the onion, place in a salad bowl and sprinkle with vinegar. Let it marinate while cutting the vegetables. Cut the cabbage and cucumbers as desired. You can simply sprinkle parsley with torn leaves, without stems. I just tore the meat into pieces. Place the vegetables on the onion and then the meat. Sprinkle seeds on top, pour oil, lemon juice, salt, pepper and mix.

Salad with chicken and Korean carrots

  • Korean carrot,
  • chicken fillet,
  • mayonnaise,
  • greens to your taste.

I eyeball everything. Carrots should be delicious. The whole taste of the salad depends on this. I used to make the same thing, but instead of chicken I threw in boiled squid cut into half rings. I made it without greens.

Amsterdam salad


  • 100 g of any green salad,
  • 75 g boiled chicken,
  • 10 pieces. black pitted olives
  • 150 g champignons,
  • 50 g paprika chips,
  • 1 tbsp. l. oil or margarine for frying (I fried in odorless vegetable oil),
  • 1 egg,
  • 1 small mango or mango juice, a little mayonnaise.

Wash the lettuce leaves, dry them, tear them with your hands, and place them in a salad bowl.
Cut the olives into slices, place on lettuce leaves, cut the chicken into strips.
Beat 1 egg, cut the champignons into slices, dip in the egg and roll in crushed chips, fry in oil until golden on both sides, place on the salad.
Beat mayonnaise with mango pieces or mango juice. (I forgot about mayonnaise, poured only juice).
Tip: add chips for the batter, little by little, they will get soggy quickly.

Salad "Gorka"

  • 100 g boiled chicken,
  • 120 g sour cream,
  • 40 g fresh cabbage,
  • 40 g salted mushrooms,
  • 40 g fresh cucumbers,
  • 40 g boiled potatoes,
  • 40 g hard cheese,
  • greenery,
  • salt.

Cut the cabbage into strips, the rest into slices, and grate the cheese. Season, arrange in a mound, sprinkle with herbs.

Other chicken salads:

Delicious salad "Bride"

  • 300 g boiled chicken meat,
  • 200 g cheese,
  • 200 g walnuts,
  • 1 boiled carrot,
  • 1 jar of pineapples,
  • 1 jar of champignons,
  • 1 clove of garlic,
  • mayonnaise

Cut everything into strips, chop the nuts, add pineapples. Mix everything with chopped garlic and mayonnaise.

Salad "Pomegranate Bracelet"

The recipe is simple: onions, boiled chicken (I replaced it with chicken ham - it turns out much more tender), boiled beets, carrots, potatoes. Everything except the chicken - on a coarse grater, finely chop the chicken, coat each layer with mayonnaise, pour mayonnaise on top and sprinkle with pomegranate - and refrigerate overnight. To form a ring: wrap the jar in cling film (so that nothing sticks), place it on a dish and form the salad around it. Then you take out the jar - and voila!

Chicken salad "For Mom"

Layers: bottom - bell pepper in small cubes, then - boiled chopped chicken fillet, top - cheese and mayonnaise. An unusually fresh salad and low in calories.

Chicken salad with pineapple

Cut the boiled chicken fillet, add canned pineapple pieces, Chinese cabbage or lettuce. Season with mayonnaise, you can add walnuts.

Chicken salad with grapes

Chicken breast is fried with the addition of curry (although you can do without it). When it cools down, chop finely (this is the first layer). Then:

  • grated cheese,
  • grated eggs.

Repeat the layers, grease each layer with mayonnaise and sprinkle with a small amount of chopped roasted almonds. And the last layer is beautiful large green grapes cut in half. They are laid tightly, cut side down. Yes, and this beauty is placed on lettuce leaves!

I did it a little differently: I lightly sprinkled each layer with roasted and chopped walnuts; in the spring, instead of grapes, I placed halves of cherries on top. Delicious!

Chicken salad with croutons

Recipe with sour cream
Cut the chicken fillet, cheese and tomatoes into cubes, add onions, sour cream and stir in the croutons just before serving.

Chicken salad with fruit

You will need:

  • 1 chicken breast without skin, boiled, chopped;
  • 1 can of champignons in their own juice;
  • 1 can of pineapple;
  • 1 apple;
  • mayonnaise and salt to taste.

Cut the breast into strips, cut the pineapples (drain the syrup first) into cubes (options are possible), cut the apple (preferably remove the skin) and cut the champignons (into cubes or strips). Mix everything, put it in a beautiful salad bowl, add salt and season with mayonnaise.

Salad with smoked chicken breast

  • 1 smoked chicken breast (chopped).
  • Grate 4 medium carrots on a medium grater and fry in sunflower oil.
  • 1 can of canned corn.
  • 2 bags of kirieski (for example, with bacon).

Mix everything and season with mayonnaise. Place the kirieshki into the salad 30 minutes before serving.

The most tender chicken salad

  • Boiled white meat chicken.
  • Grated cheese (do not spare it).
  • Cut the boiled eggs.
  • Pineapples from compote "cubes".
  • Mayonnaise.

Since there are no onions, all other products are very soft - the salad turns out to be the most tender.

Salad "For Knights"

  • 200 g ham (or boiled sausage),
  • 1 smoked chicken leg,
  • 150 g cheese,
  • canned green peas (1 can is enough),
  • 5 boiled eggs.

Cut the ham and the skinned leg into small strips. Three cheeses on a coarse grater. We also cut the eggs finely, but leave one yolk for decoration. Place in layers - ham, grated cheese, egg, peas, chopped ham, more cheese and egg. We finish with a thin layer of ham, which we now “cover” with finely grated cheese. Spread each layer liberally with mayonnaise. Rub the yolk on top and decorate with herbs, and lay peas around the perimeter.

Salad "Chicken delicacy"

  • Chicken fillet,
  • prunes,
  • dried apricots (or one of the two),
  • pine nuts or peanuts,
  • oranges,
  • mayonnaise.
