Ingredients

We will need:

  • 1 tbsp. grated carrots on a coarse grater or on a Korean carrot grater
  • 1/4 cup raisins
  • 3-4 sprigs fresh cilantro
  • 1/4 tsp. ground cumin
  • 1/2 red pepper, finely chopped or to taste
  • pinch of cinnamon
  • a pinch of ground paprika
  • salt, pepper

For refueling:

  • orange or lemon juice to taste
  • olive or coconut oil

Fresh carrot salad with raisins and hot spices

  1. Wash the carrots and remove the skin. Grate Korean carrots or chop using a food processor.
  2. Finely chop the cilantro.
  3. If the raisins are dry, pour drinking water over them for half an hour so that the berries become saturated and soft.
  4. Mix carrots with spices, hot pepper, add raisins and coriander. Salt and pepper.
  5. Season the spicy carrot salad with orange juice and vegetable oil.

The salad is now ready to serve. But it’s better to put it in the refrigerator for 15-20 minutes so that the carrots marinate a little and are saturated with the aromas of spices and sweet juice.

Preparation:


To make the raisins softer and juicier, you need to wash them, pour freshly boiled water, let them stand and “steam” in boiling water for 10-15 minutes, drain them in a colander and then cool.


Carrots need to be washed, peeled, cut off the ends and grated.


Add granulated sugar to grated carrots.


Place the cooled raisins in the same bowl and mix everything.


Add sour cream to the bowl and mix everything again.

- boiled beets – 300 g;
- fresh carrots – 100 g;
- hard cheese – 100 g;
- walnuts – 60 g;
- raisins – 60 g;
- mayonnaise – 4 tbsp;
- garlic – 2 cloves;

Peel, wash and dry fresh carrots. Grate the carrots on the finest grater. Do the same with hard cheese - grate with fine shavings.




Boil or bake the beets in advance, peel and grate on a fine grater along with garlic and walnuts. Mix. Leave a couple of nuts for decoration.




Take any shape - a tray or deep plate will do - to form even layers, you need to line the inside of the shape with cling film. Place half the beets in the first layer, add salt and pepper, and spread with mayonnaise.
