I always give these tortillas to my husband for work and to my son for school. Such baked goods come out dry and do not crumble, so my men always take fresh unleavened cakes. I once took these flatbreads to a picnic, and the whole family ate them in a minute. So, let's cook unleavened flatbread together in a frying pan - instead of bread, loaf or baguette.



Necessary flatbreads:

- 500-600 grams of premium flour;
- 200-250 grams of water;
- 1 tea. l. salt.

Recipe with photos step by step:





First of all, I sift the flour several times so that the dough becomes airy. I add salt to the sifted snow-white flour to make the dough tastier.




I pour water in parts




and start kneading the dough without lumps.




Then I add the remaining flour, but also in parts, spoons and gradually.






I shape it, roll the dough into a single ball and make sure it no longer sticks to my hands. If the dough is elastic and tight, then there is enough flour and there is no need to add more.




I leave the dough to rest for about 15 minutes. Then I cut it with a knife into even small pieces so that I can roll each into a round shape for a flatbread.




I roll out one piece of dough thinly so that the surface of the wooden board on which I am rolling is practically visible. But the dough should not tear. I seize the moment when I need to stop rolling with a rolling pin and cut out a flat cake using a round plate.




I put it on a hot dry frying pan and bake it on each side for 15-20 seconds.






I transfer the hot baked flatbreads to a separate plate. The cakes will rise, swell and bulge as they dry. This is normal. Beauty! From ordinary products without yeast, fluffy cakes are obtained. This is a miracle!




As a result, I end up with a mountain of fresh, delicious tortillas.

The flatbreads are easy to prepare, require a minimum of ingredients, fry quickly and have an amazing taste.

Ingredients:
Boiling water – 300 ml.
Vegetable oil – 3 tbsp.
Flour – 400g.
Salt – 1 tsp.

Filling:
Green onions – ½ bunch.
Salt – 1/3 tsp.

Preparation:

Sift 350 grams of flour into a bowl, add 1 teaspoon of salt, 3 tablespoons of vegetable oil, pour boiling water. Mix the dough.

Wrap in a bag and put in the refrigerator for 30 minutes, ripen and cool.

Finely chop the green onions.

Roll out the dough into a layer 5 mm thick.

Sprinkle the flatbread with green onions, sprinkle with salt and roll the flatbread into a roll.

Divide the roll into 10 parts. Take one part, seal the edges on both sides, and roll out a thin cake.

Pour a little vegetable oil into a frying pan and fry the flatbreads on both sides over medium heat until golden brown.

2. Flatbread with cottage cheese and herbs

They turn out very nourishing, tasty, incredibly tender and appetizing.

Ingredients:
For the test:
Flour – 3.5 - 4 tbsp
Butter – 200 gr. (can be replaced with margarine)
Egg – 1 pc.
Vegetable oil – 3 tbsp.
Vinegar 6% - 2 tbsp.
Salt – 0.5 tsp.

For filling:
Cottage cheese – 500 gr.
Green onion – 1 bunch
Dill – 0.5 bunch
Egg – 2 pcs.
Salt – 1/3 tsp.

Preparation:

Break an egg into a 200-ounce glass, add salt, vinegar, and vegetable oil. Stir with a fork and fill the glass with cold water from the refrigerator. Stir and place in a glass with the contents in the refrigerator.

Sift 3.5 cups of flour onto the table, grate the butter just taken out of the refrigerator, grate a little and mix with the flour.

Now rub the flour and butter with your hands until it turns into crumbs.

Make a hole and pour the contents of the glass in 3-4 doses. Mix the dough.

Divide the dough into 7 parts.

We form balls, wrap each ball in cling film. Place the dough in the refrigerator to mature for 1 hour.

Prepare the filling into the cottage cheese, break 2 eggs, add salt, finely chop the green onions and green dill and add to the cottage cheese. Mix.

Take the dough piece by piece from the refrigerator, form a flat cake and roll it out. The cake is approximately 35 cm in diameter, very thin and translucent.

Place 3 tbsp of curd filling in the middle and spread into a thin layer

Divide the cake into 6 segments. It turned out to be a chamomile with 6 petals.

We take 2 opposite segments and bend them, now the next 2 segments, and the last 2 segments. Press the flatbread with your palms so that the dough sticks together well.

Pour vegetable oil into a frying pan, heat it up, lower the flatbread and fry on both sides until golden brown. Place the tortillas on top of each other.

3. Very quick kefir cheese cakes with filling


Cheese Flatbreads on kefir with ham. They are prepared quickly, easily, from available products. The results are airy, fluffy and tender. And most importantly, they turn out very tasty. I definitely recommend trying it.

Ingredients:
Kefir – 250 ml.
Cheese – 100g.
Salt – 1/3 tsp.
Sugar – 1/2 tsp.
Soda – 1/2 tsp.
Flour – 300g.
Ham – 200g.

4. “Avar” flatbreads. It's incredibly tasty!


Avar flatbreads with potato filling. (Dagestan flatbreads Chudu). Fry in a dry frying pan without a drop of oil. The results are aromatic, satisfying, soft, tender and very tasty.

Ingredients:
Kefir – 500 ml.
Flour – 700 gr
Salt – 1/2 tsp.
Soda – 1 tsp.

For filling:
Potatoes – 800g.
Dill greens – 3 sprigs
Onion – 1 pc.
Vegetable oil – 1 tbsp.
Butter – 100 gr.
Milk – 100 ml.

Frying pan diameter 24 cm (makes 12 cakes)

Preparation:

Pour 500 ml of kefir into a bowl, add salt, 1 tsp of soda, mix and add flour, knead the dough.

Wrap the dough in a bag and put it in the refrigerator for 30-40 minutes.

Let's prepare the filling. Boil the potatoes, add butter, milk, fried onions in a frying pan, dill.



Divide the dough into 12 parts.

Take one ball, roll it out into a small flat cake, put the filling in the middle, the same volume as there was a piece of dough.

We collect the edges of the flatbread and fasten it well, roll out the flatbread. Place the flatbread in a heated dry frying pan and fry over medium heat on both sides until golden brown, about 1-2 minutes on each side. There is no need to fry the flatbread too much, they have time to cook. Remove the tortillas, wipe the pan from flour and fry the tortillas further. The flatbread sometimes bubbles, it’s okay, when you remove it from the heat, it will take the correct shape. Immediately grease the hot cake with melted butter on both sides and place all the cakes in a stack.

5. Kystyby (Tatar flatbread with potatoes). Terribly delicious!


Kystyby. Tatar Flatbread stuffed with mashed potatoes. To prepare the flatbreads, you don’t need any foreign products; they are prepared quite simply and quickly. The results are soft, juicy, tender, aromatic and simply delicious.

Ingredients:
Dough:
Milk – 150 ml.
Boiled water (chilled) - 150 ml.
Vegetable oil – 40 gr.
Flour – 500 gr.
Butter – 100 g (for greasing the flatbreads)

Filling:
Potatoes – 1 kg.
Milk – 300 ml.
Butter – 50-100g.
Dill – 1/2 bunch.
Onion – 1 pc.

Preparation:

Mix milk, water, salt, vegetable oil and flour into a dough and let stand for 20 minutes.

Let's prepare mashed potatoes.

Divide the dough into parts. Sprinkle the table with flour and roll out the flatbread. Place the flatbread in a dry frying pan and bake over medium heat for 2-3 minutes on each side. Fold in half and place all the tortillas in a stack, cover with cling film and a towel, so they will become soft and stay warm for a long time. We do the same with the rest of the cakes.

Grease the flatbreads with melted butter, first on the inside, place mashed potatoes on one half, cover with the other half, grease with butter on both sides.

6. Puff pastries with cheese. Like from grandma's oven!


Puff pastry made from yeast dough with cheese in the oven. They turn out fragrant, golden and delicious, just like straight from the oven. Simple and fairly quick to prepare.

Ingredients:
Flour – 600-650g.
Milk – 400ml.
Vegetable oil – 60 ml.
Salt – 1 tsp.
Sugar – 1 tbsp.
Dry yeast – 11 gr. (or raw yeast 33g)

For filling:
Butter – 50 gr.
Egg – 1 pc.
Cheese – 150g.

Preparation:

Mix milk, sugar, salt, yeast, flour and knead the dough and put it in a warm place for 50-60 minutes, let the dough rise.

Divide the dough into 2 halves and form 2 balls, cover with film and let stand for 10 minutes.

Take one ball of dough and roll it out into a thin layer. Grease the flatbread with melted butter and sprinkle with grated cheese.

Roll the flatbread into a roll.

From the resulting roll we form a snail. Cover with film and let stand while we roll out the next flatbread.

The snail has risen a little, roll it out into a flat cake 7-10 mm thick.

Transfer the cake to a baking sheet, cover with a towel and let the cake rise for 10-15 minutes.

Brush the flatbread with egg and bake in a preheated oven at 180 degrees for 30-35 minutes.

Is the house out of bread? Is your family used to eating fresh bread for breakfast? But shouldn’t we run to the store now? There is the simplest option - make delicious water cakes from products that you probably have in your home. Plus, your flatbreads will be much healthier and tastier than regular store-bought bread. And believe me, your household will appreciate your creation.

In order to quickly prepare the dough for our flatbreads, you need the following basic components:

flour, water, vegetable oil, a little salt and sugar, soda (baking powder) - optional.

The simplest recipe

You need to mix flour (500 grams), water (1 tbsp.), salt - ½ teaspoon and baking powder (20 g) or soda - ½ teaspoon (for fluffy dough). Cover the finished dough with a napkin for 10 minutes.

Then cut the dough into several pieces, each of them needs to be rolled out into small flat cakes. Fry them on both sides in a greased frying pan.

Ready water cakes should be stored in a bag so that they remain fresh for a long time. Before eating, the flatbread can be topped with garlic dressing (grated garlic mixed with previously melted butter). They can be safely served with borscht.

Delicious flatbreads with cheese

In a small saucepan, bring 300 ml of water to a boil, pour the boiling water into a deep plate with flour (300 g). Knead the dough and let it rest for 15 minutes. As you can see, the recipe for water cakes is quite simple and accessible to every housewife.

Cut the finished dough into small pieces and then roll each into a thin layer with a diameter of 15 centimeters. Place a mound of grated cheese in the center of each layer (any hard cheese can be used). Roll up each layer and roll out carefully. And now the finished cakes can be fried in a frying pan greased with any vegetable oil.

Please note that instead of filling you can put mashed potatoes with fried onions, salted cottage cheese, ready-made minced meat, etc.

Green flatbreads

To prepare flatbreads with water, you will need flour (225 g) and warm water (half a glass). For the filling - fresh green onions (quantity to your taste).

Prepare a soft dough from flour and water. Leave it for a few minutes.

Roll out a layer with a diameter of 40-45 cm. Grease it with any oil and scatter chopped green onions over the entire surface.

Now the resulting “sausage” needs to be divided into 5 parts and then each of them is rolled out into a small flat cake.

Fry all the flatbreads in a greased frying pan. And our flatbreads are ready!

Sweet cakes with honey

Do you want to please your kids with sweet cakes? Try it - and you will see, they will go away with a bang! Of course, like previous recipes, these water cakes are made using the same technology. So, we need two tbsp. flour, salt (a pinch is enough), lukewarm water (four tablespoons), honey (two tablespoons), 1 egg, sugar to taste. And, of course, any oil for frying.

Mix honey and salt in a deep plate, add water and egg. Mix and add flour to the resulting mass.

Cut the finished dough into pieces, and then roll each into a layer. Fry the resulting flat cakes in a frying pan with oil.

Sprinkle with sugar when serving.

Flatbread with mineral water

Mineral water flatbreads are prepared in the same way as regular ones. The difference is that instead of regular water, you can add carbonated mineral water to the dough. For the dough you need to take: mineral water (1 tbsp.), salt (teaspoon), sugar (2 teaspoons), vegetable oil. butter (2 tablespoons) and flour (2 tbsp.). Prepare dough from these ingredients.

Divide it into small pieces and then roll each into a small flat cake, grease with any oil and put any filling in the center. Pinch the edges and carefully roll out again into a small cake.
