If you get a beautiful, large river fish, Bream, the question arises - how to cook it tasty?

This time we decided to bake bream on potatoes with sun-dried tomatoes. There is little hassle, the dinner turns out to be satisfying, and the fish is very tasty!

I took the risk of baking fish with raw potatoes, but I don’t recommend repeating my experiment (it may not bake). It’s safer, as is usually done in such situations, to pre-cook the potatoes and then bake them with bream.

Composition of the dish

  • Bream – 1 piece;
  • Potatoes – 6-8 pieces;
  • Tomatoes – 2 pieces (you can take ready-made sun-dried tomatoes);
  • Greens (dill and basil) – 2-3 sprigs each;
  • Garlic – 4 cloves;
  • Vegetable oil – 3-4 tablespoons;
  • Ground black pepper – 1/2 teaspoon;
  • Salt.

Baking bream with potatoes

Prepare potatoes and tomatoes

  • Peel the potatoes and cook so that they do not crumble. Cool.
  • Cut into slices (or thick circles) and place in a bowl. Add salt and mix. Add 2 tablespoons of oil and stir again.
  • Remove the pulp from the tomatoes (scoop out with a spoon), cut the tomatoes into strips. Salt these strips, pour in vegetable oil and mix.

Prepare the fish

  • Wash the bream and cut off the fins. Clean the abdomen, remove the black film from the walls of the abdomen, remove the scales and remove the gills. Trim the tail slightly (to save space). Wash the fish again, outside and inside, and dry.
  • To cut out small bones, carefully cut the back diagonally so that you get diamonds. Do not cut the entire thickness of the fish (otherwise you will end up with pieces rather than a whole fish).
  • Mix salt and pepper, rub the bream inside and out with this mixture. Let stand for 15 minutes to salt.

Bake bream on potatoes with tomatoes

  • Line a baking tray with baking paper or grease with vegetable oil. Place potatoes on it. Place unpeeled cloves of garlic there (then it’s very tasty to break a clove and take out a tender baked clove of garlic).
  • Place sprigs and basil in the belly of the bream, coat the fish with vegetable oil and place the fish on the potatoes. Scatter pieces of tomatoes next to the bream.
  • Heat the oven to 180 degrees, place a baking sheet with fish in it, bake for 15 minutes. Then turn the fish over and bake for another 15-20 minutes until a thick fishy smell appears.

When the bream has cooled, remove the greens from the belly and transfer the fish and vegetables to a large dish (for serving).

You will need the following products:

  • Bream – 1 kg;
  • 1 medium lemon;
  • Garlic – 3 cloves;
  • 3-4 sprigs of thyme;
  • 3-4 sprigs of rosemary;
  • Vegetable or olive oil;
  • A little salt and spices.

  • Potatoes – 2 kilograms;
  • 1 bunch of parsley;
  • 100 grams of mayonnaise;
  • A little fish seasoning;

  1. First we prepare the fish. We clean the scales, remove the giblets, remove the fins and remove excess bones. Next, rinse with cold water and wipe with a towel;
  2. Then we make small cuts on it in the form of a mesh so that it is better saturated with spices. Rub it with salt and seasonings. If the seasonings already contain salt, then there is no need to use salt separately, otherwise the fish will turn out too salty. We leave it for a while so that it is soaked;

  • Bream – one and a half kilograms;
  • Champignons - 500 grams;
  • Onions – 3 heads;
  • 1 lemon;
  • Salt;
  • A little black pepper and coriander.
  1. We clean the bream from scales, entrails, fins and bones. Rinse with cold water and wipe with a napkin;
  2. We make transverse cuts along the entire carcass at a distance of 1 cm from each other;

  • 200 grams of flour;
  • 200 grams of butter;
  • 130 ml milk;
  • 1 bunch of parsley;
  • A little salt and ground black pepper;
  • Vegetable oil.
  1. We clean the scales from the fish, take out the insides, cut off the fins and wash them. Cut it into pieces;
  2. Pour milk into a cup and add some salt. Place the pieces there and soak for 15 minutes;
  3. After this, roll the pieces in flour and place them in a fireproof container greased with oil. Pour melted butter into it;
  4. Preheat the oven to 180 degrees and place the fish there. You need to bake it for 15-20 minutes;

Cooking method

Regular readers already know that my main Taster cuts, guts the fish and removes the gills exclusively himself. All I have to do is cut off the fins and rinse it under running water. That I was incredibly lucky.

As I said earlier, we cut off the fins and make small cuts on both sides of the fish, crosswise. This method is good not only for baking fish, but also for frying. Then the bones of the fish are completely fried, and the fish turns out crispy. Small bones are not noticeable, it seems that the fish is almost boneless.
We peel the potatoes, cut them into circles on the bottom of a baking sheet, I first coated the baking sheet with vegetable oil so that it does not stick to the bottom.
Salt and pepper the fish on both sides.
Place the potatoes on top and coat everything with a thin layer of mayonnaise.

Place the foil back on and place in the oven.

This dish is baked for 25-30 minutes.

Compound:

onions - 3 pcs.

bream - 1 pc.

parsley, dill, ground black pepper, salt - to taste

Preparation:

Gut the bream, clean it, wash it; if there is caviar inside, take it out and put it aside; the gills must also be removed.

Then you need to make cuts on the carcass (on the tail and ridge) every 5 mm.

Afterwards, the carcass needs to be rubbed with salt and pepper (outside and inside), if there was caviar, it also needs to be salted and put back inside the carcass.

Inside the bream you also need to put onion, pre-chopped into rings, dill and parsley.

Connect the edges of the carcass using wooden toothpicks and place on a baking sheet, previously greased with vegetable oil. Bake the dish in the oven at 150°C for 40 minutes.

After this time, the dish can be transferred to a plate and served, but first you will need to remove the caviar, onions and herbs. The latter can be thrown away, but the caviar can be served along with the onions.

Preparation:

Compound:

onions - 4 pcs.

olives - 60 g

butter - 15 g

vegetable oil salt - to taste

bay leaf - to taste

garlic - 3 cloves

lemon - 1 pc.

ground black pepper - to taste

cream or sour cream - 70 g

Preparation:

Clean the fish, remove the entrails and fins, rinse well, make transverse cuts on the carcass, then remove small bones and salt the carcass. Sprinkle lemon juice inside and out and grate with black pepper.

Then the fish needs to be stuffed with the following products: finely chop the onion and place ½ of it in the fish, then finely chopped parsley, a little lemon zest, butter and chopped olives are placed inside.

The rest of the onion should be mixed with vegetable oil, salt, add garlic and place on a baking dish.

Place the prepared carcass on top of the mixture, grease it with vegetable oil, cover with foil and bake in the oven for 5 minutes at low temperature, then remove the foil.

The bream needs to be greased with vegetable oil and baked for another 15 minutes, but the temperature needs to be increased slightly.

The finished fish can be decorated with slices of orange or apple.

Bream stuffed with buckwheat porridge in the oven

Compound:

vegetable oil - 1 tbsp. l.

dry buckwheat - 1 cup

onions - 2 heads

butter - 70 g

chicken eggs - 3 pcs.

dried mushroom powder - 1 tbsp. l.

salt, ground black pepper - to taste

Preparation:

From dry buckwheat you need to cook crumbly buckwheat porridge and add mushroom powder.

Finely chop the onion and fry in a frying pan until browned, mix with buckwheat porridge, add 50 g of soft butter.

Hard-boil and chop chicken eggs, then add them to the porridge with onions. Then add pepper, salt and cool the mixture.

Clean the fish and gut it through the head so as not to cut the carcass. Then rinse it and dry it, especially the inside. After this, you need to salt and pepper it.

Preheat the oven to 200°C. Stuff the carcass with porridge, but not too tightly. The abdomen can be secured with thread or wooden toothpicks.

Place baking paper on a baking dish, grease it and then sprinkle with breadcrumbs.

Place the stuffed carcass on top, pour melted butter on top and put everything in the oven for 15 minutes.

Then reduce the heat to 160°C and bake for another 30 minutes. Raw vegetables are suitable as a side dish.

Stuffed bream with lard in the oven

Compound:

bream - 1.5 kg

salted lard - 100 g

garlic - 1 head

Preparation:

Clean the bream from entrails and scales. Make cuts on the back and add salt.

Finely chop the lard, crush the garlic, finely chop the dill and parsley, and mix.

Stuff the fish carcass with the resulting mixture.

Afterwards, you need to roll it in flour, fry it in boiling vegetable oil, and then put it in the oven until the dish is completely cooked.
