  • 100-150 grams of regular cottage cheese;
  • 1 cup granulated sugar;
  • 0.5 teaspoon salt;
  • 0.5 teaspoon of soda;
  • packet of vanillin.

Let's start creating our aromatic delicacy. Cooking method:

  1. Flour must be mixed with baking powder, rub with butter until crumbs are obtained. The easiest way to do this is simply by hand. Do not add all the flour at once; there is a risk of getting a very stiff dough. After all, the quality of flour, the size of eggs, and the moisture content of cottage cheese are always different. Make sure your dough remains pliable.
  2. Mix eggs, sugar and salt into a single mass. Check to see if the sugar grains have dissolved.

A simple recipe for shortbread cookies, as well as several options for changing it, are given below.

For simple shortbread cookies you will need products that can be found in the kitchen of any housewife.

  • millet flour - 250 gr;
  • drain butter - 180 g;
  • yolks - 2 units;
  • sugar - 100 g;
  • salt - a pinch.

Making shortbread cookie dough is easy: the process starts with butter, salt and sugar - you need to grind them. To make it easier to grind, it is recommended to remove the oil from the refrigerator in advance - at least 20 minutes in advance.

When you get a more or less homogeneous mass, add flour in small portions, kneading the dough. Roll the finished dough into a ball and place in the refrigerator for half an hour.

Roll out the chilled dough into a sheet 5 mm thick. Using special shaped molds or a simple glass, cut out the cookies, place them on a baking sheet with parchment paper and bake for a quarter of an hour at 180 degrees.

How to cook with jam?

Children especially love filled cookies. Instead of jam, you can use jam or fruit jam.

  • egg;
  • ½ cup Sahara;
  • 1 tsp. baking soda slaked with vinegar;
  • 200 g margarine;
  • 3 stacks sifted flour;
  • 200 grams of thick berry jam.

Beat the egg and sugar into a homogeneous mass.

Grind margarine and flour separately. Combine both masses, add soda. Knead the dough into a homogeneous dough, wrap it in film or put it in a bag, and cool it in the refrigerator for about half an hour.

Divide the dough into larger and smaller parts. Roll out the larger part and place it on a baking sheet, spread the jam evenly over the dough and grate the smaller part on a coarse grater. Bake at 220 degrees. within 20-25 minutes. Immediately after removal, cut into squares or diamonds and leave to cool.

With sour cream

Delicate sour cream cookies go well with milk, tea, juice, and herbal infusions. Before serving, you can sprinkle with powdered sugar, or cover with glaze and melted chocolate.

  • fat sour cream - 250 g;
  • honey - 2 table. l.;
  • drain butter - 200 g;
  • sugar - 150 gr;
  • freshly squeezed juice from 1 lemon;
  • soda - ½ table. l.;
  • flour - 2 cups.

Mash the butter into a paste, add honey, sour cream and mix thoroughly until smooth.

Squeeze the juice from the citrus fruit, pour into the mixture, and mix again.

Sift flour and baking soda into the mixture without stirring it out.

Knead the dough by hand. Roll out into a layer 2 cm thick, cut out circles in a stack - you will get identical lumps, roll them into balls and place on a prepared baking sheet. Bake for a quarter of an hour in a preheated oven.

Sablé - the perfect shortbread

  • drain butter - 115 g;
  • sah. powder - 2.5 table. l.;
  • flour - 160 gr;
  • egg, separated into white and yolk;
  • salt - ¼ tsp;
  • brown sugar - 2 tablespoons. l.

Stir the butter, which has become soft at room temperature, with a spoon until its consistency begins to resemble cream. Then sift the powder and salt into it, mix for a couple of minutes until the mass becomes homogeneous in structure.

Next, add the yolk and stir until smooth. Finally, add the flour, making sure to sift it. Mix well - the dough will become lumpy, the flour will evenly absorb moisture, being distributed throughout the entire mass.

We stretch the film on the work surface, place the dough on it and form an approximately even oblong lump. We wrap it in film and roll it around the table to form a “sausage” of uniform diameter along its entire length. Cool in the refrigerator for a couple of hours.

After the allotted time, the dough will harden well, and it will be convenient to use: cut the sausage in half, put one part back in the refrigerator for a while, grease the second with whipped egg white on all sides and sprinkle with sugar. Cut the bar into rings and place on a baking sheet with parchment. We repeat the action with the second part of the test. We bake at 200 degrees. within 20 minutes.

Just a note. The dough for these cookies can be prepared in large quantities and stored in the refrigerator for up to 2 days, and in the freezer for up to 2 months. The workpiece is laid out in bags and used in portions.

Vanilla treat

Kurabye is one of the oriental sweets, quite popular in many countries. According to the classics, it is prepared in the form of a flower (for example, squeezed out with a pastry syringe, like meringue) with a drop of jam in the middle, or in the shape of a diamond. According to legend, a pinch of saffron is added to the dough.

  • 150 grams of powdered sugar;

  • drain butter - 150 g;
  • sugar - ½ cup;
  • salt - ½ tsp;
  • vanilla sugar;
  • granulated sugar for decoration.

The preparation method does not differ from previous recipes - all ingredients are mixed into a homogeneous mass. The only thing is that the cookies are squeezed out of a thick layer of dough, approximately 2 cm thick. Sprinkle with sugar on top and bake at 180 degrees for 20 minutes.

  • flour - 3.5 cups;

First, combine dry and liquid products in separate bowls. Then mix together, knead into a homogeneous dough, cool, roll out, cut out products, bake.

  • 170 grams of oatmeal (or ready-made oatmeal);
  • 100 g sugar;
  • 100 g plums. oils;

  • 1 tsp. baking powder.

Grind the flakes until floury. Add baking powder to the resulting flour and mix.

On margarine

Homemade cookies are made from dough not only with butter, but also with margarine. This product is very often used as an analogue of butter for baking. There is no recipe for margarine and no instructions for preparing shortcrust pastry based on this product - in any of the above methods, butter is replaced with margarine.

Just a note. You can add orange or lemon zest and a pinch of cinnamon to the dough.

Homemade cookies - serpentine

An interesting option for serving shortbread cookies is in the form of snails or serpentine. The peculiarity of this type is that it combines two doughs - chocolate and regular, sweet.

To prepare, prepare:

  • margarine - 200 gr;
  • sugar - 200 gr;
  • eggs - 2 units;
  • flour - 450 gr;
  • cocoa - 4 table. l.;
  • baking powder - 10 gr.

The preparation begins as usual - margarine is ground with sugar, egg, flour and baking powder. Knead regular shortbread dough.

Each dough is rolled out separately. Then the chocolate part is transferred to a light surface, for example, you can lightly sprinkle the chocolate with flour, roll it onto a rolling pin and roll it out on top of a light layer. The layers are rolled up and cut into pieces 1 cm thick. Bake for 15 minutes at 180 degrees.

To prepare crumbly and tender shortbread dough, no special effort is required. You don’t even need scarce products for decoration or any frills - it itself is incredibly tasty and appetizing. It is called sandy precisely because of its friability. You can bake the dough with a large cake, and then cut it into small pieces - it all depends on the specific recipe and type. In this case, you need to pierce the cakes in several places so that carbon dioxide does not accumulate. Mix the products quickly and then leave the mixture in a cold place for several hours. Certain rules should be followed when baking cookies. For example, the oven temperature should be 150-200 degrees; at a higher temperature, due to the rapid dissolution of the butter, the cookies may crumble. Before baking, brush the cakes with beaten egg, milk, or just water.

Shortbread cookies - food preparation

The main components are butter or margarine, flour and sugar, additional components are eggs, cocoa, raisins, dried apricots, cottage cheese and many others. Experienced chefs know many secrets to ensure that the dough is exactly as the recipe specifies:

- the amount of fat affects the softness of the finished product - the less fat, the denser and tougher the cookies are;
— the dough turns out to be especially crumbly if you use powdered sugar instead of sugar and put only yolks in it;
— it is better to choose flour with a low gluten content, the dough will be more elastic, and the cookies will turn out tastier;
- if you add a little water, the dough will look good, but the cookies will become tougher.

Recipe 1: Chocolate shortbread cookies

For lovers of chocolate treats, a real surprise is a simple and delicious cookie with cocoa in the dough, and to enhance the taste, pour it with melted dark chocolate.

Ingredients: butter (100 grams), sugar (1/4 cup), flour (1 cup), cocoa powder (1/4 cup), dark chocolate for decoration.

Cooking method

Since the dough takes only a short time to prepare, turn on the oven so that it warms up thoroughly. Beat butter and sugar with a mixer. Sift cocoa and flour directly here, beat until the dough becomes homogeneous, “knead” it with your hands. Form the total volume into 16 balls, approximately the size of walnuts. On a baking sheet with parchment, place them at a distance and press lightly with a fork - you will get an interesting pattern. Small molds can be pierced with a toothpick or a match in 2 pairs crosswise - you get original “button” cookies. Bake for 20 minutes and let it cool. All that remains is to melt the chocolate and decorate the cookies - pour a small spoon over each circle. Leave for the chocolate to harden - everything is ready for tea drinking.

Recipe 2: Coconut Almond Shortbread

Almonds are a very healthy nut, but they should not be eaten in large quantities. Our recipe contains just enough of it to bring the greatest benefit to the body, but we are not thinking about this, but about its wonderful taste in the company of coconut.

Ingredients: flour (250 grams), sugar (and vanillin) 1 cup, coconut (pulp ½ piece or shavings 1 bag), butter (90 grams), almonds (50 grams), coconut flakes for decoration.

Cooking method

Beat eggs with sugar, add flour and butter. Grate the peeled coconut core and chop the almonds. Add these components to the resulting mass and beat well. Initially the dough turns out sticky, add flour gradually so that it stops sticking to your hands. Leave for 1 hour in a cool place. We make cookies and decorate with shavings. Line the pan with parchment and bake the cookies for 15 minutes at low temperature (160 degrees).

Recipe 3: Recipe for shortbread cookies with interlayer

Unexpected guests are on the doorstep, and you don’t know what to treat them with? Don't despair. Put the kettle on and try this recipe. The cookies just melt in your mouth, none of your friends will leave until you eat them all. The most important thing is that the layer does not need to be prepared separately - thick jam or jam, for example, from apples or plums, will do.

Ingredients: flour (2 cups), sugar (1/2 cup), margarine (150 grams), egg (1 pc.), salt (half a teaspoon), soda (quarter teaspoon), jam or jam for a layer (50 grams) ), powdered sugar.

Cooking method

We prepare a classic dough from sugar, flour and margarine and eggs, add soda and salt to the flour. Roll out into a layer of approximately 5 mm. We cut out the cakes for the dough; they turn out very beautiful if you use a corrugated notch. Place the pieces on a baking sheet and bake at a temperature of 240-250 degrees. Bake for only 10-12 minutes. Glue the halves together with jam or marmalade. Sprinkle with powdered sugar. Recipe 4: Curd shortbread cookies

A simple recipe for unsweetened curd cookies, similar to shortbread.

Ingredients: flour (350-400 grams), butter (can margarine, 250 grams), cottage cheese (250 grams), sour cream (200 grams), sugar (1 spoon).

Cooking method

Pour the flour into a bowl and add softened butter or margarine, cut with a knife, mince the cottage cheese and add to the dough along with sour cream and sugar. You can add more sugar than indicated in the recipe. Stir the dough, knead it with your hands and leave for 1 hour in a cold place. Roll out on a board and fold in half. Then take it out into the cold again. Continue this way 3-4 times every 10-15 minutes. Cut the dough into shortcakes and bake in the oven for about 10-15 minutes.

Recipe 5: Shortbread cookies with poppy seeds and lemon zest

Poppy not only gives an original taste, but also greatly decorates the products. Regular shortbread cookies with the addition of poppy seeds look very beautiful, and if you add lemon zest to it, as they say, “you will lick your fingers.” It cooks quickly, but you will still have to wait two hours for the dough to ripen and cool.

Ingredients: butter (softened, 180 grams, ¾ packet, sugar (200 grams), egg (1 piece), milk (1 spoon), lemon zest from one lemon. Vanillin, lemon juice (1 spoon), flour (2.5 cups ), poppy seed (2 tablespoons).

Cooking method

Beat butter with sugar and add egg. Pour in the milk, mix everything with vanilla and lemon juice (you can use a few drops of food flavoring), little by little add sifted flour and poppy seeds. We form two sausages from the dough, about 20 cm each, wrap them in film and leave them in the refrigerator for 2 hours. Unwrap the sausages and cut into circles, place on a baking sheet at a short distance from each other. Bake for 10-15 minutes at 180 degrees. Leave the cookies on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

— When kneading the dough, you need to soften the butter. Try to think about this in advance as it cannot be melted at high temperatures. It is better to take it out of the refrigerator overnight, or use the microwave at room temperature.

— An interesting shape for cookies can be in the form of baskets. They can be filled with any sweet content - cottage cheese with raisins and dried apricots, jam, preserves or boiled condensed milk.

Homemade baking doesn't get easier than shortbread. Introducing a classic recipe for making crispy, melt-in-your-mouth shortbread cookies. To bake it, you don't need any special culinary skills. In addition, the dough serves as an inexhaustible source for invention. By playing with additives and shapes, you can come up with a variety of delicious crafts. We will show one of them - stars with a red eye - in the appendix to the recipe. To prevent shortbread cookies from being brittle, we will not just pour sugar into the dough, but dissolve it in a small amount of water.

Ingredients:

  • 250 grams of flour,
  • 200 grams of butter,
  • 1 egg,
  • 100 grams of sugar,
  • 1.5 tablespoons of water,
  • 50 g viscous red jam (for the stars)

Baking shortbread cookies

The shortbread dough is kneaded in literally five minutes. Pour water into a glass with sugar and mix until the sugar dissolves a little.


Now take butter at room temperature, add the resulting sugar syrup and mix. No mixer required. You can stir everything with a regular spoon.


Add an egg.


Pour in the flour. Mix with a spoon.


Finish kneading the dough with your hands, forming a soft ball.


Place the ball in a plastic bag and put it in the refrigerator. Let him lie there for at least an hour. (By the way, this shortbread cookie dough can be made for future use. It will last in the refrigerator for about 3-4 days, and the shelf life in the freezer is not at all limited.)


The chilled dough rolls out easily, does not melt and holds its shape perfectly. Just in case, you should sprinkle the board with flour to prevent the cookies from sticking. Cut out various cookies using cookie cutters.


Place the cookies on a baking tray lined with baking paper.


Before baking, be sure to preheat the oven to 200 degrees. Place the cookies for 5-7 minutes until the edges turn golden.


How to make jam stars from shortbread cookies

You may have noticed that we used a star shaped cookie cutter to cut out the cookies. We made small round holes in half of the stars (a piece from a disposable syringe was used as a recess).

We take an asterisk without a notch. Put some jam in the middle. The jam should be quite thick and sticky.


Cover with a second star, with a round hole, and press down.


It takes about half an hour for the cookie halves to stick together properly. During this time, I do not recommend leaving cookies unattended, otherwise there will be nothing to serve with tea.
