Bon appetit!

Baking real, almost Italian, pizza in a gas or electric oven is difficult, but it is possible. I tried a dozen and a half different recipes before I came to the conclusion that it was not only and not so much a matter of the method of preparing this famous pastry, but rather the baking technique. In order for the pizza dough to be thin and soft, like in your favorite pizzeria, it is important not only to know the proportions of the products, but also to observe the recommended temperature when cooking. In a conventional oven at medium temperature, you get a delicious flatbread with filling, but it is almost impossible to achieve the desired airiness, softness and at the same time crispy crust. Here are some cooking tips that will allow you to come close (and sometimes even exceed) the culinary results of famous pizzerias.

  • Traditionally, special ovens are used to bake pizza. Baked goods are cooked in them at high temperatures and quickly. At home, baking stones made from fireclay clay are used for these purposes. They even out the temperature in the oven and ensure uniform, quick baking of the top and bottom. Pizza is cooked at 250-270 degrees for 5-7 minutes. The cheese does not have time to dry during this time. When cut, you get delicious cheese “threads” that stretch behind the piece. I tried preheating the oven to maximum and cooking in a regular metal biscuit tin, on a baking sheet. The result is a properly baked top and an almost raw, moist bottom. If you bake in a pan with holes, it will taste better, but not quite the same as in pizzerias. A little hint: instead of expensive stone, it is permissible to use unglazed building tiles made from environmentally friendly clay. It costs much less. But don't forget to ask for a quality certificate.
  • The quality of flour is of great importance. Use a product of the highest quality or with a high percentage of protein.
  • To make the dough softer, boiled potatoes are added to it in an amount of 10-15% by weight.

Yeast-free crispy dough for thin homemade pizza

Required products (for 1 large/2 small):

How to quickly and easily prepare successful pizza dough without using yeast:

Mix flour with baking powder (baking powder). Sift into a deep bowl. Make a small hole in the center.

You can knead with water, milk or a water-milk mixture (1 to 1). The liquid should be boiled and cooled to room temperature. Dissolve salt in it. Pour into the well. Add oil. Ideally, you should use extra virgin olive oil - classic for Italian pizza. Refined sunflower oil is suitable.

At this stage, you can add aromatic seasonings: ground pepper, oregano, thyme, basil, rosemary. Start mixing the food with a fork, collecting it from the edges to the center. The mass will be lumpy and heterogeneous. When it becomes difficult to mix and the fork becomes sticky, transfer the dough to a work surface greased with a thin layer of fat.

Knead for at least 7-10 minutes. The dough will be elastic, not sticky, and quite tight. Form it into a ball. Return to bowl. Cover with cling film. If possible, leave at room temperature for 30-40 minutes. During this time, gluten will be released and the baked goods will be softer. If you have limited time, you can bake right away.

Roll out thinly. Make the sides. Brush with sauce. Add the filling to your liking. I had sausages, onions, bell peppers, cherry tomatoes, mozzarella bars. Bake in a preheated oven until done.

Serve immediately after baking. The pizza turns out to be record thin, very soft on the inside, crispy on the outside. The pizzeria doesn't cook so deliciously.

Quick, straight dough with dry instant yeast

Ingredients for 2 medium pieces (glass - 250 ml):

Method of preparation (recipe with photos step by step):

Sift the flour onto a cutting board or into a large bowl. For ease of kneading, make a depression in the center.

Boil the water. Cool to a temperature of 35-40 degrees. Dissolve sugar and yeast. Stir until completely dissolved. Pour the liquid into the flour.

Stir with a spatula. Add oil.

Switch to manual kneading. If the mixture is a little sticky, grease your hands with oil. If necessary, add a couple more tablespoons of flour. Knead the dough with your hands until it becomes elastic, homogeneous, and no longer sticks to your palms. Grease the inside of the bowl with vegetable fat. Place the dough. Cover with film. Place in a water bath - in a large bowl of hot water.

In just 20-30 minutes, the yeast base for soft homemade pizza will be ready for further preparation. It will increase in volume by 2-3 times. Knead her. Divide into portions if necessary.

Roll out into a thin round (rectangular) crust on a floured surface. Make a high edge if desired. Top with your favorite sauce. Spread the filling evenly. I had the meat version: smoked pork belly, chicken tenders, sausage, red onion, cherry tomatoes. I put the cheese under the filling. This time I chose cheddar. Decorate the finished baked goods with fresh herbs. Serve immediately before the cheese layer hardens. I advise you to bake on a baking stone at a temperature of 250-270 degrees for about 7 minutes. It is also acceptable to cook in a regular oven. It turns out tasty, but not quite like in cafes and pizzerias. The result will be a slightly denser, crispier base. The recommended temperature for cooking in the oven is 200 degrees. Time - 15-20 minutes.

Classic yeast dough for thin pizza, as tasty as in a pizzeria

Required:

How to properly prepare thin and very soft pizza dough:

You can knead using fresh or granulated yeast. In the first case, the product must first be crumbled with your fingertips. Mix yeast, sugar, 1-1.5 tablespoons of flour in a bowl.

Bring filtered water to a boil. Cool to 36-38 degrees. Add about half a glass to the bowl with the dry ingredients. Stir. The result will be a grayish, flowing, homogeneous mass - dough. Cover with film (cloth napkin). Place in a warm place to ripen for 10-30 minutes (depending on the type, freshness, and quality of the yeast). Stir salt in the remaining water.

A ripe dough will look something like this. The mass will become lighter, covered with thick bubbly foam, and will increase in volume several times.

Pour the remaining flour into a deep bowl. Pour in water with dissolved salt. Add the dough.

Stir. Pour oil into the resulting lumpy mass.

Knead a smooth, moderately tight, soft, elastic dough. When kneading, it should not stick to your hands or work surface. Place the future baking base back into the bowl. Cover with a napkin. Allow at least 1 hour for the climb. To speed up the process, place the dough in a water bath, as in the recipe above.

The amount of yeast can be reduced by 2-3 times. But in this case, the time to rise will increase proportionally.

This is how it rises - the airiness is just off the charts. Working with yeast base is very comfortable. It comes out moderately dense, rolls out thinly, and does not tear. Form a round base with or without sides in a special form with a holey bottom or on a board. The better the crust is rolled out, the thinner the pizza will be. Spread a layer of sauce in the middle. Add your favorite filling. According to Italian rules, grated (chopped) cheese is placed on top of the sauce or directly on the filling. In my photo - smoked salmon, mussels, squid, shrimp. For piquancy, I used thinly sliced lemon and garlic sauce. Cheese - brine mozzarella. To ensure that the finished pizza is soft and has a crispy crust, cook according to the recommendations suggested at the beginning of the article.

Serve it up!

How to make delicious and easy pizza dough at home? Yeast or without yeast, with water, milk or kefir? Pizza dough recipes are as varied as the pizza itself. Pizza lovers give preference to one recipe or another depending on their culinary preferences, but at the same time everyone wants their homemade pizza, like in an Italian pizzeria, thin and soft, or vice versa with a crispy crust.

DoughVed has collected for you 11 of the best pizza dough recipes for every taste. We are sure that everyone will find a simple and tasty way to prepare dough for the most popular Italian dish to their liking, learn how to bake delicious pizza and how to make pizza dough correctly.

The national Italian dish is pizza, which is an open pie or flatbread with various fillings, primarily tomatoes and mozzarella cheese. The term “pizza” first appears in texts of the 20th century, although the ancestors of pizza - flatbread with cheese - existed in Ancient Greek cuisine.

The invention of modern pizza is attributed to Naples cooks of the late 18th and early 19th centuries. Since then, hundreds, if not thousands, of ways to make pizza and dough have been invented. Today we will talk about 4 yeast and 7 yeast-free dough recipes, the intricacies and secrets of making homemade pizza like in an Italian pizzeria, and we will also tell you how you can freeze the remaining dough for future use.

How to make dough for homemade pizza: preparation rules

Which dough to choose for making pizza at home? The classic Italian version and the simplest pizza dough is a yeast base on water without eggs, but it is not at all necessary to adhere to the traditional technique. In home cooking, pizza dough is prepared without yeast, with kefir, milk or sour cream, with mayonnaise or even beer. Make fluffy, crispy pizza dough or thin and soft, like in a pizzeria - decide for yourself.

Read:– three recipes for fluffy and soft puff pastry pizza.

Regardless of which recipe you choose, the pizza dough should be springy and soft during kneading (unless, of course, it is a liquid dough), pliable and easy to handle. If you add too much flour during kneading so that it does not stick to your hands, the desired consistency will disappear.

DoughVed advises. The best way out in this situation is not to add flour when kneading, but to lubricate your hands with vegetable oil.

When it comes to actually baking real Italian pizza, the two most important conditions are high temperature and minimal toppings. It’s not for nothing that Italian pizzaiolo masters prepare pizza in special wood-burning ovens. In a traditional Pompeian oven, the temperature is so high that it cooks pizza in just 90 seconds.

Avid pizza lovers should consider purchasing a special wood-burning or gas pizza oven - such an oven will have to be installed in the backyard of a country or private house - or consider purchasing a portable electric mini-oven, which is suitable for indoor use, including in an apartment.

If you don't have an oven, preheat the oven to maximum, the higher the temperature, the better. For example, at 260 o C in just 5-10 minutes, at 220 o C - in 10-15 minutes. For the same reason, place a baking sheet or a special stone for baking pizza in the oven in advance so that it has time to warm up, and transfer the pizza to an already hot surface.

The more toppings on the pizza, the longer the cooking time, the wetter the finished baked goods will be - not at all the result that you would like to achieve from making homemade pizza. Limit yourself to a thin layer of your favorite filling and a small amount of good cheese.

From the specified amount of ingredients, approximately 450-500 g of finished dough is obtained, which is enough to bake one large pizza or two medium pizzas with a diameter of about 25 cm.

Yeast pizza dough can be frozen and stored in the freezer for up to three months.

Ingredients

  • dry instant yeast – 1 tsp;
  • warm water (not hot) - three quarters of a glass;
  • wheat flour – 2 cups;
  • salt – 1.5 tsp.

Preparation

  1. Let's prepare the necessary ingredients: yeast, warm water, flour and salt. Dissolve the yeast in water: pour water into the mixing bowl or large bowl, sprinkle the yeast evenly into the water and leave until it dissolves.
  2. Add flour and salt to the water with yeast, stir with a rubber spatula. At this point the dough should begin to clump together into mealy clumps.
  3. Knead using a dough mixer or by hand on a floured cutting board for 5-8 minutes, until the dough forms a smooth, slightly sticky ball that springs back when pressed with a finger. If the dough sticks too much to the dough mixer bowl or hands, add a little more flour, but no more than 1 tbsp. at a time.
  4. Option 1: We make pizza right away. If time is limited, use quick yeast pizza dough immediately after kneading. The finished baked goods will be thin, with a crispy base.
  5. Option 2: Let the dough rise. If we plan to make pizza on the same day, and we have free time, grease a bowl with vegetable oil, put the dough there, cover with cling film and leave to increase in volume at room temperature for 1-1.5 hours.
  6. Option 3: make the base in advance. If we bake pizza in the next few days, cover the bowl with the dough and put it in the refrigerator. If you have time, you can let the dough rise for at least half an hour before putting it in the refrigerator, although you can skip this step.
  7. If the dough was in the refrigerator, take it out and let it warm to room temperature. Meanwhile, preheat the oven as high as possible. Place a pizza stone or a thick baking tray with low sides in the lower third part of the oven.
  8. Divide the dough in half, roll out or level each half into a circle with a diameter of approximately 25 cm. Transfer to baking paper, cover with a quarter cup of sauce, cheese and filling to taste. Carefully transfer the pizza to a baking sheet or stone and bake until golden brown and the cheese is melted. Baking time depends on the oven temperature and how thin or thick the base is rolled out.
  9. Cool the pizza slightly and serve immediately. Cover the other half of the dough with sauce, cheese and filling and place in the oven.

  4. Form into a ball and place in a greased bowl, turning several times to coat the dough completely with oil. Cover the bowl with a towel or cling film and leave warm until doubled in volume, about 30 minutes, or in the refrigerator for at least 12-24 hours.
  5. Place the dough on a floured work surface and knead for 2 minutes. Using your palms, flatten it into a disk approximately 18 cm in diameter. Leave for 2-3 minutes.
  6. We stretch the base a little more with our hands, and again leave it alone for 2-3 minutes. We repeat the procedure several times until the base has a diameter of 30-35 cm.

Sour cream dough for pizza

Pizza dough with sour cream without yeast is good because the recipe does not use any baking powder or chicken eggs - only sour cream, butter, flour and a little salt. All the ingredients just need to be mixed and kneaded, and you can immediately bake a delicious pizza.

Ingredients

  • butter – 150 g;
  • sour cream – 1 glass;
  • wheat flour – 2.5 cups;
  • salt - a pinch.

Preparation

  1. Melt the butter and cool slightly. Mix melted butter, sour cream and salt.
  2. We begin to add flour in small portions, mixing thoroughly each time. The dough should be soft, slightly oily, and not sticky to your hands. Don't add too much flour or it will become tough.
  3. Divide the dough in half if making two small pizzas. Knead each half with your hands, sprinkle with a small amount of flour, and form into a ball.
  4. We flatten both balls into two pizza bases, grease them with sauce, lay out the cheese and the desired toppings. Bake in a well-heated oven until done.

Recipe for pizza dough in a bread machine

Yeast pizza dough in a bread machine is probably the easiest way to make a classic Italian base. The bread machine will do all the work of kneading the dough for you. Panasonic, Redmond and Moulinex make the whole process of making pizza at home much easier, LG and Kenwood do no worse.

  • Mexican style: Mix 2-3 tbsp with flour. corn starch and 1 tbsp. Mexican spice mix, and also omit the salt from the recipe. Top with spicy tomato sauce, browned ground beef, onions, bell peppers and cheddar cheese.

How to freeze dough

Many pizza dough recipes are designed to make two or even three open pies - this is quite convenient, but not always suitable for a small family. To avoid eating the same pizza for a week in a row, you can freeze the dough.

You can freeze absolutely any dough with the exception of liquid dough - yeast dough must first be allowed to rise and then divided into portions sufficient to prepare 1 pizza. Such preparations can be stored in the freezer for up to three months - on the eve of the day of preparation, transfer one serving from the freezer to the refrigerator and leave overnight.

What you will need

  • fully prepared dough (if it is yeast, you need to let it rise first) in any quantity;
  • olive oil;
  • parchment or baking paper;
  • bags for freezing food.

Instructions

  1. Knead the dough according to the chosen recipe. Form into separate balls, large enough to make 1 pizza.
  2. Place on paper (this is optional, but it’s easier to work with) and cover each ball with a thin layer of olive oil on all sides.
  3. Place the ball in a freezer bag, close the plastic zipper and release all the air from the bag. Place in the freezer and store for no more than three months.

Before use, just place one bag in the refrigerator for 12 hours, then remove the dough from the bag and leave to warm up at room temperature for half an hour.
