For the first time I decided to try baking flourless semolina pancakes. And I got a 3-in-1 recipe: thick pancakes, thin ones, and even pancakes!

You and I have already tried many types of pancakes: both thin ones with milk, and plump ones with kefir, and yeast, and cottage cheese; wheat, rye and buckwheat, but I met semolina-oatmeal for the first time! I love semolina and oatmeal, just like my son, so the recipe immediately seemed pretty to me. But my daughter does not want to eat semolina porridge, like oatmeal. But pancakes - everyone eats with great pleasure!

And I’ll make semolina-oatmeal pancakes - without flour and it will be more dietary, and the taste will be more interesting, and the child will eat with pleasure not very favorite, but healthy cereals, without even guessing that they are in pancakes. 😀

Ingredients:

  • Semolina - 1 glass;
  • Instant oatmeal - 1 cup;
  • Kefir - 2.5 cups (that is, 0.5 l);
  • 3 eggs;
  • Sugar - 3-4 tablespoons, depending on how you like, sweeter or not;
  • Salt and baking soda - 0.5 teaspoons each;
  • Flavorless sunflower oil - 3 tablespoons.

How to bake:

Pour semolina and oatmeal into a bowl.

We mix.

Pour kefir, mix thoroughly again and leave for 2 hours.

This is what a magnificent mass is obtained over time.

Add sugar, salt and soda (no need to extinguish, kefir will extinguish) and mix well.

Beat the eggs until fluffy and add to the dough, mix again.

Finally, pour in sunflower oil and mix again.

The semolina-oatmeal dough seemed thick enough to me, but I haven’t diluted it yet, but decided to try baking pancakes. She greased the pancake pan with vegetable oil, warmed it up well and poured a ladle of dough.

Yes, it spread reluctantly, it was necessary to shake the pan properly, and the result was small in diameter, but lush, very tender and tasty thick pancakes. Straight oatmeal pancakes!

When I baked a stack of plump pancakes, I wanted to experiment. And I laid out the next batch not with a ladle, but with a spoon, in portions. We got some cute donuts!

So experiment - the recipe is successful, whatever one may say!

  • semolina - 1 cup
  • kefir or unsweetened yogurt - 500 ml
  • chicken eggs - 3 pcs.

  • salt - 0.5 tsp

Recipe semolina oatmeal pancakes:

In one container, mix regular oatmeal and semolina.

Pour them with kefir or unsweetened (without additives) yogurt, mix and leave them to absorb kefir for 1-2 hours.

Beat eggs lightly.

Pour them into a bowl with kefir, swollen semolina and cereal.

To thin the pancake batter and give it extra lightness, beat it with an immersion blender while grinding the oatmeal. The dough should not be very thick so that you can pour it on a pancake maker and form a full-fledged pancake. If your dough still turned out to be thick, add a little more kefir to it.

Finally, add soda, sugar and vegetable oil to the dough. Thanks to the addition of vegetable oil to the dough, it is no longer necessary to lubricate the pan with it - pancakes will move away from the surface of the pan just fine.

Fry manno-oatmeal pancakes, adjusting their thickness and size as you wish, in a hot frying pan.

You can make them in the form of pancakes - small fluffy pancakes or traditional Russian pancakes. Manno-oatmeal pancakes have an amazing “perforated” structure!

Put ready-made pancakes on a dish piping hot and present them to the family table with pleasure.

Do not forget to serve jam, honey or delicious maple syrup to semolina-oatmeal pancakes.

How to bake pancakes without flour

Pour a measured amount of semolina and oatmeal into a deep container and immediately pour them with kefir. Kefir can be used cold, taking it from the refrigerator.

After mixing the ingredients, you need to forget about them for a couple of hours. During this time, oatmeal and semolina will swell in kefir, increasing in size:

After the time allotted for swelling has elapsed, all bulk ingredients and vegetable oil must be added to the mass.

After kneading, beat in the eggs:

Mix the mass, here is the dough for pancakes without flour and you're done!

Since the dough contains oatmeal, they will be visible to the naked eye, but it should be so. The pancake dough itself is quite dense, it will spread longer in the pan, but it will spread.

So, the dough is ready, now it's time to heat the pancake pan. You can also use it if you have it on the farm, but due to the low power, the pancakes will be baked longer.

Heat the pan for baking pancakes, then grease with vegetable oil with a brush, distributing it evenly.

And pour the first pancake with a ladle, spreading the dough over the surface of the pan as thin as possible. After flip:

The pancake must be turned over with care, prying the edges with a spatula so that it does not tear during the coup.
